Bought a butterflied leg of lamb for our Christmas dinner. Never cooked with a local lamb before, was worried it may be to gamy or tough. I stuffed it with goat cheese and spinach the meat cut like butter! The butcher was kind enough to cut up the bones for me to make a gravy. The best Christmas dinner to date!
